I'm a big fan of the YouTube channel 'Cooking With Ry' and have tried many of his recipes. All have turned out really good so I had to do the smoked meatballs. I used apple for smoke wood.
The meatballs turned out much better than the pics. Sorry about that.

Then the meat inspector showed up.

They cooked really quick, about 25 minutes, but my fire was pretty hot.

We will send half of this batch home with the daughter and son-in -law to feed their tribe and have pasta and marinara tomorrow. Anything left we will freeze.
 
I have been wanting to do this. My wife has a good meatball recipe but is just not quite there. She gets a decent scald on them in the oven but no where as good as I could outside. Pretty sure the reason I like store bought over hers is they are broiled. What IT do you pull at?

165* Internal temp. If your pit is dialed in at 350*, it should take about 35-40 minutes. Be sure to check at about 25 minutes to assure they're not over done.

Thanks for all of the compliments guys. The kids had them sliced in half on a toasted hogie bun with melted smoked monzerella cheese. They definitely want more!
