Those came out great . Beef over oak is fantastic .
Thanks Chop, the wife even ate one which means they were not too smoky but roasted just right!

Thanks Bear, much appreciated!

YEAP! Agree with all the others...great job on this!
Also, that smoker you have is awesome! Is that firebrick all the way around? Did you build that smoker?

Thanks yankee2bbq. Yes there is firebrick all the way around! Yes my son & me designed it and built it for his high school civil learning project. The class is done but we are actually still finishing the grill out but as you can see it is operational (had to for the class). Here is the build post and a few other cooks.......

We still have the smoker plates & drip pans finalize, 3/8 SS rod grates, side burners, concrete shelf, some bling, and paint......

Wow those look awesome. I've never given them much thought when they're for sale at Safeway but you've inspired me to try some!

Thanks omnivore!

Many people pass on beef ribs cause they don’t know their potential but they are really top shelf protein!!! Over the years the price had slowly increased cause they are catching on. I used to be able to get them for $2 lb.....not anymore!

Funny story, I was teaching a youth class about a year ago and brought some smoked beef ribs in for an object lesson about documenting personal experiences........it was amazing on how many moms called me afterwards to find out how to cook them cause their kids wanted more! Bingo object lesson learned!
