This is a photo blog of today’s flame grilled T-Bone Dinner!!

Started with these weekend sale T-Bones $6.98 lb, seasoned with SPOG & a splash of Lemmon Pepper & Sugar.

Prepped the X-Fire Grill with a bed of coals and then a mix of oak and cherry.

The T-Bone matched with Marsala baby Bella’s, Yukon gold taters w/ a salt crust, sharp cheddar, bacon, sour cream, & green onion.

Just in case you are wondering this meal was the only thing we ate today and I'm still in a food coma!!!!!
 
Awesome . Beef steak cooked over an all wood fire is beyond words . That meal looks fantastic , high five the wife on the bread / desert .

The wife says she is honored by your complements! She also made the green goddess dressing from scratch, chopped tarragon and all, oh and she pickles the onions herself too! I’m a very lucky man!

Thanks pushok2028, I just wish we had left overs! Well I guess we still have salad and spuds but the meat and pudding have vanished as if they didn’t exist.....maybe it was just a 3D rendering......

I’m really liking the new XFG! I was going to cook the steaks on the gasser but I was feeling bad about being lazy since the wife was in overtime mode....so put a chimney on the copper pot burner to get started, after 10 min I moved the starter to the inside of the XFG for another 15 min to get the coals good and started then dumped them and added 3- 2x2 splits of oaks. After 10min I put on 2 - 2x2 cherry splits and after 10 min dropped the T-bones.

The T-bones saw about 1.5 min per side right in the flames (4 iterations to get the X) and then I raised them up a few cranks to “finish” in the oven heat. Same technique most restaurants use, supper hot sear and finish in oven to perfect IT temp (10 min total cook time). Rested 10 min to cutting to eat.

Thanks Warren! Oh the plate got mopped! "Beef Marsala" is fav of ours but people often look at me like "what"....

3-4C beef stock
1/2 - 1 C Marsala (amount based on your desired taste) ....(you can also use Bourbon here as well but 1/2 the amount)
1 or 2 trimmed beef ribs
1-2 Tbs beef demi
simmer (covered) the above for 3 to 5 hours.
after simmer time above drop 1/2 onion, 1/2 cup each of copped carrot & celery, a fresh stem of rosemary & thyme, and a couple cloves of garlic - simmer for another hour then strain.

Add your mushroom of choice, I prefer baby bella's & I flash sear them in a supper hot pan (leaving them under done in the middle) then add them to the strained stock above to rest at a very low low simmer to "rest" (this finished the cooking but not over cook them). Then season with salt, pepper, and bit of sugar if you like a sweeter Marsala. Don't be afraid if is seems strong cause you want a bold flavor cause then a little goes a long ways and it blends with the steak juice and makes magic. I also add the resting steak drippings in tot he sauce just as we plate.....

I then thicken it just a little bit (not gravy thick, so just a thin film stays on a spoon) with a flour/butter rue or when I'm lazy just a bit of starch solution (DON'T over do the starch!!!....it will ruin your whole day!!!).
