So today we decided to do a big bald BBQ BB Ribs test in the XFG.
Started with 4 racks all cleaned and membrane removed.
Then they got dusted down with some kosher salt & Big Bald BBQ Rub early this morning.
So got the XFG started up with a chimney of coals.
After the time in the fridge the racks got a little more rub for a nice bark.
The XFG is up to temp!
I set it up with a small bed of coals and fire on each side oven to have an indirect cooking set up.
Just a sneak peak about 2 hours in :-)
The XFG is staying very consistent, I feed it with a couple of unlit coals and a 2 inch split of oak and a chunk of pecan about each 30 minutes.
I have noticed that the skin of the XFG is warm so the fire bricks are fully warmed up and the retained heat is really paying off with consistent temp!
Fingers crossed!
