Hi guy's

I'm cooking baby back ribs today.

I followed the advice and it was all successful for 2 hours.

I had the temperature stable at 250 for the first 2 hours and then it shot up to 290.

Not sure why?

I have only had 1 vent open just a little bit.
 
Ribs still turned out good tho!
