I need some advice/help with a problem. I made a batch of pepperoni sticks. It was a 25 pound batch. This is about double what I usually put in my smoker. I had moved the racks around to make more room I thought. The problem is not all the skin dried out and about half of it didn’t take the smoke. I do believe I over crowded the smoker. Do you think a fan installed to help move the air around inside would help with the skin dying process? If you were to use a fan what type would it be?

It's cured so dry it before you goin the smoker. A broom handle between two chairs works. Hang the sausage and use an oscillating fan to dry the casing. You still must leave space for smoke to contact all surfaces. So don't overload the smoker...JJ

JJ has you covered.   I dry the casing out of the smoker sometimes.   In the smoker sometimes.    Needs room in the smoker for the smoke and heat hit all surfaces.

Thanks guys, I knew that just haven't used my smoker in about 3 years. Busy and moving too often. I will not make the same mistake twice. What about a fan for air movement and circulating the smoke better?

If you can keep the temp below 150, a computer fan will move air and smoke around but it is not really needed....JJ
