Ok my wires look a little different so can ya confirm what I think is correct?
30” masterbuilt digital

From all the pics tallbm has posted and through his detailed explanation I think I should connect white to black. And then blue to red. Yes?

CORRECT; Happy it matches up for you! I recall the wire colors did not match Tall's writeup. No problem for me as I am pretty familiar with wiring and electronics and tested with my meter when I did it. From memory, the white and black wires are the cord (power) and the red and blue from the element (heat).

@zwiller has you covered.
It's always black smooth to a braided wire (red of blue in your case) and then white smooth to the other braided wire. That's it :D

I really dislike wire nuts especially for solid to stranded braided connections.
Started using WAGO Lever Nuts.

I tend to agree but if wire nuts pass the tug test it's good. I normally use these for this sorta a stuff.

Those are pretty slick. Had not seen them before.

temp drone from the PID on the bottom

I'd put it somewhere in the middle .
I put mine through the back wall .

It can be pulled into the smoker more .

Everything mounted on back .

That stick is a new one on me . Mine didn't have that . I had to download the manual .
