My afternoon snack.  Wing sections grilled/smoked with a little mesquite, then fried to get them good and crispy.  I planned on tossing them with wing sauce but they're pretty good the way they are.

I'd like to try something like that with my MES30. I'm just not sure how long & what temp to run the smoker.

Also- did you just take them from the grill to the fryer or did you have to do anything to them before frying?

And how log in the fryer & at what temp?

Sorry for all the questions, but this sounds very interesting to this newbie!
