I would like to build a RF smoker to handle a whole hog. My question is will a 120 gallon propane tank be big enough for a hog?

Define "hog"?  40 pounds or 400 pounds?

A 120 gallon propane tank will be ~24" x 65" or so...  So a medium (<100#) pig may work butterflied, for racing style, you may be able to do 200# or so...
