Saturday's Menu
Grilled Spatchcocked Chicken
Dirty Rice w/ Andouille/Chicken Livers
Glazed Grilled Carrots, Ginger/Garlic
Garlic Parmesan Bread
Ginger Snaps

Grilled Spatchcocked Chicken
Spatchcock the wayward birds and rub well with, Chile's Chicken Rub
Grill over medium direct heat till the breast IT is 165°

Dirty Rice w/ Andouille/Chicken Livers
1lb Jasmine rice
1bs Andouille sausage, grilled and sliced
1lb chicken livers, dredge in seasoned flour, pan fry and chop
4C chicken broth
1 onion, diced
1T garlic, minced
Red/Yellow bell pepper, diced
Bacon/Liver grease, dirty, see comments below
Cajun spice and red pepper to taste

In a medium sauce pan saute rice in the dirty bacon/liver grease till opaque, add onion, garlic and peppers, saute for 5 minutes

You want to scrape your skillet after cookinging both the bacon and livers.
All those little crunchy blackened bits are what gives Dirty Rice it's name and loads of infused flavor.

Add broth, Andouille and livers, season to taste

Bring to a boil then lower heat to a fast simmer and cook for 25-30 minutes

Glazed Grilled Carrots, Ginger/Garlic
3lbs tender young carrots
Glaze
1/2C honey
1/4C olive oil
1/4C each Soy and Ponzu
2T brown sugar
1T salt
2t fresh ginger, grated
OR (***pick one***)
2t fresh garlic, finely minced

Grill carrots next to chicken till just tender, then start brushing with glaze till finished, once finished salt to taste

Ginger Snaps
Ginger Snap Sandwiches of Maple Creme and Bacon
Ginger Snaps with Homemade Crystallized Ginger

Maple Creme
1/8C Maple syrup
2C Powdered sugar
5.5oz Cream cheese
4.5T Butter
Beat cream cheese and butter, beat in P. sugar and maple
Chill well, use Ziploc with cut corner as piping bag

Homemade Crystallized Ginger
1C fresh ginger, peeled, sliced 1/8" rounds
3C sugar and 1/4C for coating
3C water
Combine sugar and water, bring to boil, add ginger
Fast simmer for one hour, drain and lay ginger on rack to dry till just tacky
Toss with sugar to coat
Can store for up to a month in airtight container and refrigerated.

My first thought was to get away from the Chile grill and smoker.

One of the things goin in my pot today for my first attempt at a crab boil is Hillshire Farms Kielbasa sausage. Not the same as, but as close as I can get on the left coast.
Anyway, shy of smoking it more, I was thinking (dangerous, I know) of doing a sear on it just to get some grill lines and caramelization on the cut pieces.
Anyway, prep-work goin on here, and I'm sure you are up to your butt in your tasty project.

You've got the cookies four ways. Which did you all like?

I've had ginger snaps for reference, but what do these taste like with the bacon fat in them?
 
To all y'all who've expressed interest, offered compliments and Liked this cook, "Thanks a bunch, I appreciate it all."
I stayed busy all day in/out of the kitchen, had fun with my kids assembling the cookies and wound up with a great family meal for Saturday evening.

I forgot about my chicken for awhile while assembling cookies with my kids, let it cook too long before flipping it like I normally do. When I did flip it it was so tender it was falling apart.
The breast came up to temp before I could finish crisping the skin, and in the kitchen the breasts the breast were super juicy... I may forego flipping my spatchcocked yardbirds from now on.

The carrots developed some real nice sweetness from the grilling.
The sauce was good but could use a few tweaks, garlic or ginger pick one but not both, and maybe a tablespoon of salt.

The cookies were a huge hit.
The bacon grease factor? I'm not sure I can hit on it without having some regular to compare to.
My favorite were the ones with the crystallized ginger, everyone else and especially my In-Laws, loved the Ginger/Maple Creme Sammies the most.

And you really out did yourself on those Ginger Snaps! My favorite is the sandwich with bacon.
