Never had it myself but Chef Daughter #1 paid a premium for Horse Sausage and Steak in Italy. Said it was the best meat she ever tasted. Only in America are Horses romanticized. Other countries respect them as tools, transportation and food...JJ
Well that news article explains why so many commercial sausages are hard to clone with the right flavor. We just need to add horse meat and all the other crap they DON'T put in the ingredient list!!!
