Fellow Canadian smokers what's in the smoker for Canada Day?
The wife said she was getting a brisket. Last night I asked about the meat, she didn't get anything! 5:30 after work and we're in a mad dash around the city looking for any kind of large chunk of meat, bare shelves everywhere that was open and most shops closed at 6.
Back home and I rummaged through the freezer and came out with some rib tips that have been at the bottom for awhile, that will have to do! They have been in the MES since 11:45. I think when they are done I'll pull them apart and make sammiches since they have a lot of fat and cartilage and wifey is a bit of a stickler when it comes to picking meat off bones. Threw in two small pans of mac and cheese just now to go along with it.
