I smoked a dozen bacon wrapped jalapeños today. Never fails...best flavor ever!!! The jalapeño isn't hot enough for me. I went on Amazon today and bought a injector cannon so I can fill the peppers without cutting them in half.


I'm looking for opinions based of experience here. Mi want to buy a hot spice to mix with the cream cheese...something that will bring a tear or two. Anybody got any suggestions?

S2K9K is on to the one. I have herd that there is one hotter from the Inda area, but can not remember the name. But the Ghost Chili will deffinately be noticed....
 
Good luck. I tried a piece of a ghost chili that was the size of a sesame seed. My mouth burned for an hour. I like some heat, but am more for the flavor.
 
You've got to catch the jalapenos at the correct stage of ripeness. I pickled some about mid-summer that were nice and green and they were only mildly warm in my opinion. The next go around I let them stay on the plant much longer and deprived them of water for a few days right before I picked them and they were awesome. I learned several things. When picking out jalapenos to eat, cook or pickle look for ones that have black and green skin or have what look like scales....I grew a whole bunch that lit me up pretty good and I can handle hot. Now I've got 10 pints of pickled jalapenos that no one else will eat in my house but me

Oh yeah and don't clean them out....just cut the top off and stuff them as is. That will help a lot.

Yeah I've always cleaned them out good prior to putting anything in them. Also, I buy them locally. And it matters where I get them. Walmart sells the little b-word peppers...but Publics has these really large jalapeños that always have some kick to them. But even then, it's never enough for me.

I'm the guy on the wall of flame at the local B-dubs along with a bunch of other crazies that like the hot sh!t. So I'm just looking to fling some fire in the kitchen on the weekends after a 12 pack lol
 
You can also try ABT's with Habaneros instead of jalapenos. I have done this several times but I have only found one other person who can handle it besides myself.

I've considered this, but everytime I think of it, the store that I happen to be at doesn't have any.  Habs are hot...no doubt, but I wonder if ABT's would have that yummy flavor/texture like the jalopeno does?

They taste great, texture is no problem, just a little smaller then normal ABT's (and not as thick) but taste much better (if your a chili head). I am trying to find the pictures I posted on here when I did it a while back. Next time you come across Habs buy a couple and try it along with the regular ABT's. Can't ewait to hear what you think about the volcano dust.
 
Here you go. ABT's made with HABS (3 on the left) the rest are regular. I halved, de-seeded and de-veined, stuff with cream cheese and a lil smoky then back together, wrapped in bacon, toothpick to hold as one. I gotta make them again, soooo good

 
I actually bit the tip off one in St. Augustine...this was in public. I never felt so pathetic and helpless in my life! I kept my game face on the whole time, but inside I was dying! I can't wait to get this volcano dust in this week...I'm in the mood to bring a few ABT's into work for the guys and see grown men pout like little girls lol

Well my small shipments came in the mail today!  Got my Jerky Gun and a small can of "Volcano Dust 3".  I'm ready to get some bad a** peppers done up this weekend.  The ingredients are pretty cut and dry on this bottle:  Bhut Jolokia, 7-Pot, and Scorpion Pepper.  I can smell the aroma from the lid and it's even sealed!
