First time smoking ribs and my wife and I are on Whole30 meal plan for the month. Made a rub and will use apple cider vinegar to spray and for moisture when i wrap them. Just put them in an hour ago so we will see how they come out. Doing them at 225 with the 3-2-1 method. Using my homemade smoker with an amnps filled with cookinellets perfect mix pellets. When do y'all spray them with ACV?

What is the Whole30 meal plan?

Sounds like my kinda diet if you can eat ribs!

I usually spray mine with a 50/50 mix of bbq sauce & apple juice.

Whole30 is eating only meat, vegetables, nuts, seeds and fruit. You don't eat any legumes, sugar or grains. And obviously nothing processed.

Your ribs look nice and smoky, but geez, 7 hours???  Smoke 'em hotter next time - 250-275.  Same product a lot faster.  Never trust time or temp - go by feel.  Pick 'em up with gloves or a clean towel when you think they're close - they will talk to you and let you know if they are ready to be taken off the pit.  We use a spoon to check our ribs here at my BBQ joint - turn the spoon so that the bottom is up and run it under the ribs from end to end.  When the ribs form over the spoon like a snake going over a rock they're usually pretty good.  The big bone end of a rack of spare ribs finishes later than the small bone end, so keep that in mind as well.  Keep up the good work!

Thanks for the advice. I kept my temp at 225 and I now know that was a mistake. I will definitely try it again at a higher temp.
