Here in New England what better things to do than smoke a 103 # pig on a cold and snowy day. We wanted to get the local town people together so we started up the smokers and prepared a pig by injecting it with an apple juice injection and rubbed it down with smokin' guns sweet heat! We put it into the Humphrey's smoker that was holding stead at 250 degrees and left it in there undisturbed to get a smoke bath until it reached 160. Then we injected it again, wrapped it in foil and flipped her on her belly. Put her back in the smoker until she reached 198 degrees in the ham. It truly was amazingly delish!
