It's been since May (2018) since my last posting of any sort and it was a reply. So, to say I have been negligent in my smoking posts is the understatement of the year. This thing I had called a job not only continued to interrupt one of my favorite passions, it got worse. So, I fixed that. I start a new job in the new year. All kidding aside, it was nice to spend some real time with the family this holiday season and I finally got around to doing some smoking! I am looking forward to the new opportunity in the new year.

I am kicking off the new year with a big puff of smoke. Gotta do 3 racks of BBs and 3 racks of SLCs and 2 birds for New Year's Day. It is actually for a friends birthday. Yes, his B-day is Jan 1. I'll post some pics of that smoke tomorrow.

While out picking up the ribs and chicken this morning, Costco had some nice beef plate ribs that had my name on em. Figured I would knock some of the smoking rust off with those today as a scrimmage for tomorrow. Sorry no pics of the prep or the cook, just the finished product.

Did em on the PBC since I needed a fast, hands off cook. I did some trimming and seasoned them up with mostly salt and pepper mixed with some Salt Lick rub. Hung them for about 2 1/2 and then foiled for about 1 1/2 hours. Came out nice and tender.


Served with a double wedge salad. Blue cheese dressing of course.
