I like smoked foods and when we buy a house next year I want a nice smoker. So I am starting to think about that now and such. I like the idea of a PID controled unit as I can get it to do what I want, and I am confortable wiring industrial control panels. This makes me think about a home build or modified electric smoker. I am also interested in cold smoking and the AMNS looks great as a smoke source, and it makes sense to me to build one that could do both.
I have limited experiance with sheet metal and large metal fabrication so I am not sure about building a box that way.
Is this idea of building something aiming a bit high to start with? What resources should I look into to figure out what I want to do?
