New guy from Milwaukee. I've seldom smoked regularly, and if I did it was always in a Weber kettle. This weekend I smoked a rack of baby backs in a small Weber Jumbo Joe. First try at using something that small, it turned out OK, but could have used more foil time than I gave it.

The temps in that thing were kind of hard to control, mostly because it was super windy out. But I had people coming over so I was committed to making it work.

I'm going to be picking up a Masterbuilt Pro propane unit, probably this week. My thought was to build a stand for it out of pressure treated deck wood. Does anybody see a problem with that? I see people putting the propane units, or even charcoal grills and smokers on their decks pretty frequently. By building myself I can make it fit the exact space I want it to, and I was going to bolt it to the top for stability and security. Would hate to have it go missing. I guess if heat under is an issue I could put fire bricks under it.

Anyway, that's my long winded intro, I'm off to explore around these pages.

Thanks for the welcomes. I'm probably going to pick up my unit tonight. Yesterday I was at Walmart and roaming through the camping aisle. That had an entire stack of the cheap 10" Ozark cast irons with stickers on them for the 8's. So I picked up a 10" chip pan for $4.98.

Hopefully I'll get it all built and be smoking by the weekend.
