Thx. Pops, As I would call myself a new meat cutter, I was taught to butcher game by a butcher and then we started raising pigs and was taught to butcher pigs. I know there are a few different versions to cutting swine but all I have seen seem to be similar. I did not know the differences in the rib cuts. Thx again.

What I am still not clear when I butcher a pig is where is the demarcation line between backs and spares.
