Milling some hard white wheat berries.

This flour is good for sourdough and yeast breads.

I did sift with a 60 mesh screen, the chaff goes to the cluckers

That is awesome Rick! And a win/win when there is zero waste. Good bread flour and chicken feed on the discard chaff… very cool. Betting that will make some tasty eggs for you all. 👍
 
If you have not tried them yet, Barton Springs Mill sells whole berries and they are the best ones I've found in 20 years of home milling. The ryes, in particular, are amazing. Also, I'd encourage you to make use of 100% of the wheat instead of sifting. Using long, cold fermentation to soften the sharp edges of the bran.

 
Almost a bad bake.

Had my sourdough/italian herb stick to my proofing basket. I had to help it out and it just went flat. Baked anyways.

Not too bad but wont have it for sale.

Using rice flour or wheat (ie AP flour) for your baskets? AP flour has gluten and will "react" with the dough hence sticking. Rice flour has no gluten and won't stick (or won't as long as it sufficiently shields the dough from the rattan).

Yes I know all this. I use a mix of rice and ww.
