i don't cook many tenderloins but today its cloudy and damp outside and i thought i would cook a tenderloin thats been in the freezer for a while , the idea is to slice it, brown it, and put it on a bed of rice covered with chicken gravy but i don't want the meat to be dry and tough any ideas ?

I would personally brown it whole in a CI skillet then throw it in the oven to finish - internal temp 145. Slice after resting, make your gravy with the pan leftovers.

Edit: dont slice too thin, a thicker piece is less prone to drying provided it wasn’t overcooked to start

I like them stuffed and or smoked.

some days you just don't feel like dealing with the smoker
