It started with one rack of spares. After a trip to BJs it has turned into spares, beef ribs, a pork butt, and a brisket flat.

The brisket and butt went onto the Egg around 7. I am using the adjustable rig for 2 level cooking, but I think I will fire up the WSM for the ribs. The Beef ribs are already in singles (great for rub application!)

Here is my rub plan -

Simply Marvelous Cherry on the Pork and spares

Plowboys Bovine Bold on the brisket.

The beef ribs are a bit of a mystery to me. Not exactly sure how long they will need to cook so I am putting them on with the spares and they will be done when they are done. Since they are all seperate, I am thinking of using multiple rubs.

Ok now I see where everything else is. Now I just need soem Q-view. I know that it will look good but I still like to look. I'm weird that way. After all I do like to play with my food.
