Tex, burn-in with the WSM??? Totally not needed. Just wash the grates and your good to go. Get that food on right away. You'll want to build up the seasoning around the door and lid to seal up smaller leaks. Some WSMs may need a tweak to the door, but most are good to go right out of the box. Remember it's porcelain coated so no manufacturers oils.

Well It kind of sounded a little over the top when I read this on the internet (you know if it's on the internet it's got to be true.) Heck I knew I wasn't going to run a full load of charcoal and wood through this cooker and not cook something! Thanks Chris, I'll take your advice and cook. This weekend it's will be my first pork butt on my new WSM.
I'm also going to steal an idea from Browneyes - might be a glass or 3 of Pendleton involved at some point ;)

Heading to Vegas for the SEMA show (Sun thru Sat). Think they'll let me take my Smoker on the plane☺?

Kawboy, look for a couple of friends of mine. Quietin Bros. Automotive. I think this is the second year they have a car in the show. They're a couple of friends of mine growing up.

Doing a favor for ex wife and her husband. Whole packer brisket overnight for their party tmrw night. Supposed to be a wicked Nor'easter tonight... challenge accepted

Wanted to do a brisket in my new 270 smoker. Have had it for two weekends both of which the weather sucked LOL. I am about to go buy a portable canopy. Honestly should have just fired it up in the drizzle.

On the bright side that brisket continues to wet age in the cryovac which I just read really enhances tenderness.

Hopefully I get some time to walk around some. Looks like a huge event!
 
We are between weather systems today, so I am smoking up some salmon candy. Actually, it's steelhead, which I like better.
I have the rest of the week off, so I'll be doing a lot more smoking, if the weather cooperates.

Got a 4lb prime rib roast going with pecan pellets. Pecan smells so good!!!

That salmon candy sounds great... Can't wait to try some fish in my smoker....
 
LOL bucket over the MES controller and "strategically placed wood" over the vent. Total crap weather here too. Cheese turned out AWESOME tho. Tried dust in the AMNPS for the first time.

My Q turned out great. Did 3 racks of St. Louis ribs. I am getting better at trimming them each time. Just used salt and Jeff's Original Rub on the ribs. Also, did 2 chickens cut in half. Made a standard brine with some added Jeff's rub. Had some family members over and they were quite satisfied. So was I, the meat turned out fantastic! The addition of a baffle to my Dyna-Glo really evened out the heat inside the smoker box.
