Southwestern pork sausage.

4.5 lb butt

1/2 lb pork fat or fatty pork butt

2 T kosher

1.5 T black pepper

2 t red pepper flakes (or more to your taste)

1.5 t ground coriander

1 t ground cumin

1 t ancho powder (or whatever you like)

4 glove minced garlic

Hog casing

Grind stuff in your normal way.

NOTE: If you want to smoke this you will need to add 1 t cure #1

Used regular Idaho spuds. Suppose you can use any kind of taters though
