Just thought that it would be cool to see what everyone is smoking this weekend. Ill start..... I am smoking a beef roast that I have brined and rubbed with an apple rub. ooh yea Qveiw to follow

I'm smoking spareribs and chicken thighs. I'm in a rib cook-off next sat, and they threw in chicken to make it fun. I've never done both together. Need to practice, and eat!! HAPPY SMOKING.
 
I have 7# of cheese in right now getting some Peach smoke from some of Todd's pellets!

Tomorrow I'm smoking my first Canadian Bacon. One was in a sweet brine and the other in a Tasso inspired brine courtesy of ChefJimmyJ!

All my outdoor stuff is in the shed as we prepare for the house,barn and fence painting extravaganza...

Got out some pulled pork from the last session to carry us thru and will be starting on some andouille...
 
Unfortunately I am in Tacoma this weekend(been here since the 24th of Sept)  leaving Monday for home.  My sone is home smoking bacon with peach dust as we speak.  He had to stay home and hold down the homestead and do the chores.  When I get bach, I have 2 butts, more bacon and 12 pounds of cheese to smoke.  I also got a camera for vacation so Q-view when I get back.  Steve
 
Getting ready to head to fishing camp,see Gone fishing thread.So just made about 3kg of curry paste.I only needed 500 gms to take with me to do fish curry out in the wilderness. Going up to vac pack it at mates butcher shop for easy transport. Dont want a jar breaking! 

Its my own version closer to Malaysia/Thai than indian. Ginger ,galangal,turmeric ,garlic,habanero chilli,kaffir lime leaf,lemongrass,shrimp paste,lime juice,palm sugar,nut oil, cilantro then fresh ground dry spices.
 
Open the door man it's me, cooknhogz.....cooknhogz ain't here....no,,its me cooknhogz.....lmao ....Smoking some good stuff. 82.5 lbs. pork butts, 25 lbs. smoked wicked beans, and 20 lbs. cole slaw for a wedding party.

The tires on the truck !! Hopefully this will  be the last weekend of volunteering to help rebuild a buddies house that was flooded.......

Tires or meat? That's a tough one, I love smoking both!!!
 
I can't smoke tires I sold my mustang if I try to spin the tires on my Subaru it grips so hard I end up in the back seat.
 
Saturday Casey will be home and the other guests want Spare Ribs. Will also be making my version of Dutch's Beans, Mac 'n Cheese and Surf 'n Turf Moinks...JJ
