Martin-tell me about the Sunday smoke! Cured? Cornish Game Hens? How did you do this? Brine with a curing salt, did you cure prior to smoking? We love the Cornish Game Hens, so I am really interested in what your process was?Saturday: Short-Rib Pastrami and Bourbon Cottage Ham.
Sunday: Cured Apple Wood Smoked Cornish Game Hens.
