I plan on smoking a turkey breast for Thanksgiving. I did one a few years ago but need some refreshers. I did not brine the last time and do not plan to do so this time. What is a good wood for turkey? I have maple, hickory, apple, and oak. I think I used apple the last time. What is a good rub? I had a recipe the last time but I can't find it. I have a ten pound breast so I plan on about 40 minutes per pound. Is this about right? I am using a WSM 18 smoker.

I don't do a lot of smoking so I depend on you guys to keep me straight.

I will be injecting one and brining another. Will smoke at 275 to 300 using apple. The brine will be for two days. In my opinion just a few hours doesnt do anything. Cook the breast to IT of 157. Yardbird is an excellent poultry rub but i will be using my own mix. A 15 lb turkey usually takes around 3.5 to 4 hrs but should cook to temp not time. If done early wrap in an aluminum pan and put in a cooler with old towels. It will stay hot for several hours.
