Friend of mine wants me to come out this weekend to his farm and help him out with a few things and wants me to bring smoker and cook some food. Not really wanting to do ribs again as I just did this for us a few weeks ago. Thoughts and suggestions would be appreciated! Will be cooking for 8 people I believe. What to cook and how much would be appreciated as I usually only cook for my wife and I

What time frame are you looking at?  If you are planning to do a smoke and eat within a 5-6 hour period then your options are different than if you were going to smoke something overnight for a lunch or dinner meal the next day.

If all else fails and you need a quicker smoke you can do 4 whole hens/chickens.  They would look really cool if you could stand them all up in the smoker and then pull them out for eating the meal.  If you have the space you can spatchcock them (cut the back out and lay flat).  Also smoked mac'n cheese goes well as a side.

Having some cream cheese stuffed and bacon wrapped jalapenos would be great appetizers (also called ABT's).

Anyhow those are my ideas.

Something shortish (4-8) hour window really. I was thinking along the lines of maybe a boneless loin and pulled pork. Never done pulled pork before but done plenty of Loins. I'm already planning on doing stuffed jalapenos as well.

You could smoke pulled pork before hand and reheat but 4-8 hours isn't going to be enough time to do it fresh.

Boneless loin is easily doable in that time frame.

Pulled chicken would be another option if you're wanting sandwiches. Big batch of thighs or 3-4 whole chickens would do you just fine for 8 people and would be done in that time frame as well.
