HI!
I have a Smoked Butt Ham Out of date by 3 weeks.
Been in Fridge :37 o F.
Still in cryovac.
Color looks ok ?
Not sure If its still good to eat ?
Can Rancid be reduced , altered or reversed during a soak ?
I know its going to be very salty.
Will give it the smell test, then rinse and soak, do any overnight soak.
Can I add anything to help it during the overnight soak?
Sugar or ?
I wanted to do it next few days
Thinking to cook before Easter and Can make a Backup plan for Easter.
WHAT ARE YUR THOUGHTS ?
Think I am beating a dead HAM ?

I’d eat it. Wash it up real good, let it sit 10 minutes then sniff test it. It’s cryo wrapped so it may feel slimy and have cryo stink right out of the bag. Brown sugar and butter sounds good to counter the salt.
 
For me, I would do the smell test and go from there. If it smells at all, I'm throwing it out. I've had food poisoning and it's just not worth it for me.

If I'm betting man, you won't smell anything off on it though.
 
Sell by is not the same as Use by. Curing is intended to extend the life of food.
 
As long as it looked fine and smelled fine, I'd eat it. If the cryovac is still tight and not blown up, I wouldn't expect botulism was growing in there.
