Winn-Dixie had these on sale. I have two packs of chuck roast, these are thin and cutup like country style ribs. Not a lot of fat on them.

My first thought is to smoke them for a about a hour then slice up and sauce for a appetizer. Anybody got any suggestions?
 
I had some of them not long ago. I just did them Sous Vide, and seared them in a Pan (bad weather).

But your idea is fine---Maybe Smoke & then finish on the grill.

Smoke them, cube them and add to chili.
