What to do with Okra

I took from fresh okra sliced sprayed with some oil ,creole seasoning and a few other spices then air fried it was a crispy snack similar to potato chips quick and easy. Don’t get me wrong I like breaded and deep fried or pickled as much as the next guy

Cook it down. There is a recipe in the Mosquito Supper Club cookbook called Smothered Okra where the author cooks down five pounds of okra, reducing it to about a pint. Four or five hours of a very low flame. She uses the reduced okra "sauce" as a base for gumbos and other things.

Freeze what you can't eat.
Don't avoid all the big pods. See if your thumbnail will cut in the pod. If so it's good to go.
Buying (or getting) only small pods you lose a bunch of okra relative to the weight.

Here's a recipe that we like and it's not slimy...

We also like stewed okra and tomatoes over rice, pickled okra, and fried okra. For the fried okra, I just dry bread it and deep fry.

I don't like okra when it gets much bigger than my middle finger, it gets woody and tough...
 
I decide on cornmeal pan fried for my first dish to go with Tri-tip tonight. Man my hands are slimy after cutting them up. I rinsed and rinsed the okra but that slim not come off. Guess be good after fried. Going to let them sit on rack until ready to cook. Now I know why I buy them all ready breaded!

Leave the slime on them until you have them coated in meal to bind the meal on them. BTW, cornmeal mix works real well for a dredge. Then fry them and the slime will go away.
Frying okra will make the slime disappear before putting them in gumbo, plus other soups and dishes too.
 
Let me suggest another dish. Sort of a stewed tomatoes and okra.
Start with some bacon and fry to your desired doneness. Remove the bacon and set aside to be chopped. Add some diced onion to the pan and cook til about translucent. A little tomato paste can be added with the onions if you want. Add a little minced garlic and cook til fragrant. Add your cut/chopped okra and cook til the slime is gone. Add more oil if you have to. Then put diced tomatoes in. Canned is fine and maybe best. I like a can of Rotel** in the mix. Cook down until much of the liquid is gone. While reducing the liquid chop your bacon. Just before the liquid is reduced to your liking season to taste and return the bacon to the pan and finish reducing.
**Even though I call it Rotel I normally use the Red Gold version for everything since it's in a 14 or so ounce can as opposed to Rotel's 10 oz can and I love diced tomatoes and peppers.
 
Mom cooked fried okra a LOT! I think she just used an egg dredge, Cornmeal, & Crisco. Now we just slice it and throw it in the air fryer until crispy - no dredge or corneal. Salt or season to taste. We eat it a lot.
