Smoke residue.  It'll happen with any type of chips, pellets, or chunks.  The chips don't put out as much smoke, so you may not have noticed it before.

No harm from it.  The entire interior of ALL of my pits have a nice coating of it.

It shows VERY well on glass.  Clean your glass after each use, because once this stuff gets thick, it's almost impossible to get off.

Look on the sides of the UDS, I'll bet you have it there as well.  You'll also notice it on your chrome grates.
