I'm about to do my first casing product, hot dogs and snack sticks, this weekend and see conflicting advice on the order of grinding, adding cure, and adding seasoning. Or does it even matter? Some people add it all before grinding, some add cure first and grind, then seasoning, etc etc etc. I am smoking the products if that makes any difference. Also, I see the cure being sprinkled on the meat and others dissolve it in water first, does it make any difference. Also, I bought the binder from ButcherPacker and not sure when to add it.
Any thoughts and advice on this topic is greatly appreciated!
