Cut up a butt the other day, cured for 2 days, smoked with oak today on my Bradley. Tasso and chicken breasts.

Tasso will be used for seasoning beans, cabbage, whatever else I can think of. Chicken for other recipes, smoked king ranch chicken, enchiladas, ? Waiting for all of it to cool, then will be vacuum sealed and frozen


I'd have to look at the cure recipe again, but Morton TQ, paprika, red pepper, garlic powder, black pepper, brown sugar off the top of my head
