What happens if I don't "overhaul" for the first three days?

    Not sure it would be a good idea, but figured I'd run it past the experts here.  I'll be buying some bellies Friday morning.  I could get them started curing that morning, but I'm going out of town for the Memorial Day weekend, and won't be home until Monday night to rub and turn it over (I believe that's called "overhaul").  That would be three days siting in one position.  Not sure that's a good idea.  I'm sure there are good reasons that you are supposed to turn it.

    So do I: (1) start the cure Friday, with no turning until Monday night; or (2) be patient and put it in the cure when I get home?

    Just saw this----Hope I'm not too late to ease your worries:

    You could do either.

    It isn't going to hurt not flipping it until Monday. If I were you, I would put it in -----Then flip it Monday, when you come home. Then I would leave it on that side until Wednesday (two days). Then go back to every day flipping. 

    Hi Mountain tells people to cure their BBB for 10 days, flipping it only once (after5 days). Personally I think that is WRONG!, but that is in their instructions.
