What do you sprinkle on a smoked turkey?

What is your favorite thing to sprinkle on a turkey after it comes out of the brine and before the smoker? Does it really matter if you won't likely eat the skin anyway?
 
Nothing on the skin if you don't eat it...But...Mix your fav spices, no salt, with butter or bacon grease and apply liberally under the skin. I like Onion, Garlic, Black Pepper, and Bell's Poultry Seasoning, 1Tablesoon each of the first three and 1teaspoon of the Bell's, mixed...JJ

I was thinking, I'd like to sprinkle my teeth on it.
But not when it is between the brine and the smoker.
Nope. I'll wait till it's done.
 
We have skin eaters and skin haters, regardless of how good it is. I usually spray my turkey with oil, sprinkle on the herb blend below, then spray with oil again. I also sprinkle the herb blend over my potato, onion, carrot, celery, and garlic filled drip pan.

When I carve the turkey, any skin that doesn't get eaten is added to the stock pot with the turkey carcass.
