what are the benefits to brining your meats

for give my ignorance I am treading in waters I don't know I have not heard of a brine be for this wed site how do you brine and what are the benefits to brining your meats
 
Brining brings in flavor into the meat & tenderizes & adds moisture to it. I would try brining a chicken & see how you like it. For our poultry brine we use 1/4 cu salt, 1/2 cu raw sugar 1/2 cu Montreal chicken seasoning, & 1 gallon of water. Try it & see if you like it. I don't brine pork or beef. I will put pork & beef in a marinade, but not a salt/sugar brine.
 
Most only heat the brine to dissolve any ingredients, if they even do that.

Your meat must be brined in the fridge to be safe.

I brine almost all of my turkey's and chickens. To me it adds moisture and gives you a chance to add some different flavors to your birds.
 
do you heat the brine up or use room temperature water
I like to split the liquid up:

Like if you're going to use a gallon of water, take one of the 4 quarts, heat it & mix all of your spices in that hot water.

It will dissolve stuff better in hot water.

Then when you have it all dissolved, take it off the heat, and add the other 3 quarts to it.

Now you won't have to wait near as long for it to cool enough for safe brining.

I have also substituted about one quart worth of ice for one of the quarts of water.
