Chris, I'm curious why. I like not having to empty it every cook, and the ease of taking it off and to the backyard to dump.
A few reasons actually.
1. The whole bucket setup occasionally falls off when moving the kettle over grass.
2. Maybe it's just my bucket setup but squeezing the handle to release the bucket to empty it is a pain.
3. If any water/moisture has gotten into the bucket. Then cleaning it out the next day can be like breaking up cement.

With the dish I just squeeze one of the springs and dump it out on my yard. Easy-peasy.

I have both styles . Lift and twist, and a squeeze . The squeeze kills my wrist , and the lift and twist you have to stand on your head to see both sides of the pivot . I have to many things to catch fire around the patio to have an open one anymore , but they are easier .
