They look good. Sometimes stuff dont turn out like you want.
 
They look good to me. If the wife likes them then your doing great. I’ve never tried it. I make chicken cordon blue fatty with ground chicken. Always good
 
They look really good to me also. If they're on the drier side you could always make a cheese sauce to pour on top.

Point for sure.

How do we do this low and slow on a WSM from scratch ?

R Rathog23 , you should probably start a new thread with this question. I've CCB many times on my kettle and WSM. It's not very hard, but you don't want to hijack this thread.

Chicken courd on bleu is one of my favorites.

Never thought about doing one up in the pit until now.

Courd on bleu fatty sounds great too.
