I always learn something new from watching Alton Brown.
We UDS smokers are buccanneers, which comes from users of a "boucan" which native islanders used for roasting meat. They built bamboo racks and cooked their meat directly over the coals....nearest i can tell that's what we do on the UDS minus the bamboo.
We are the modern day Buccaneers, and i'm proud to be one!
