i like the idea of a reverse flow and something i can use my own cut hardwood.

Have you also considered the Stumps & Superior style smokers?  Both are gravity fed with charcoal as the fuel source but like a WSM will go for hours and hours without much vent/air adjustment or adding fuel once stable (unlike a stick burner).  They are also pretty much "set and forget" when paired with a BBQ Guru controller.

Nothing wrong with a Lang or other reverse flow, I was just wondering if you had also considered a gravity fed insulated smoker like those since you are used to a WSM.

This sounds to me like you're headed in the right direction. Charcoal is getting more and more expensive, and from everything I've heard and tasted, stickburners put out some pretty amazing product. My only experience with a Lang is having eaten several times at Southern Soul BBQ, and chatting with that Dirty Hippie** about the smokers and how much he loves them. Judging by the food, I can definitely vote for the Lang.

**His words, not mine. He actually seems like a really nice guy and is usually willing to chat for a bit. I was surprised to see him out there tending the pit the last time we were there, given all the TV time and popularity they've gained lately.

Well jerseydrew, I'm sorry that I can't give you an unbiased opinion; you just have to go with a Lang-that said, it's up to you to decide which model and size you want to go with.

loaded question...I have a Lang and love mine...dont think I have heard many complaints at all with Langs except the shipping is expensive but they dont control that.  Make great Q, easy temp control, even temps across the chamber.  I'm glad I bought mine.

I don't own a lang but do have a r/f stick burner and absolutely love it. There is definitely some flavors that can't be replicated with anything other then a stick burner.

Like others I own a Lang and haven't seen any other brand that I'd swap it for. Maybe I haven't seen all the different brands but I've seen a few
