Look for a good running thermoking refrigeration unit off of a reefer trailer. They are diesel powered, but can be converted to a electric with a motor.

Came in here to say CoolBot. Lots of great info and guides on their site to do exactly what you are looking to do.

Any issues with humidity freezing up the air conditioner ?
Buddy of mine says that's where he has problems with the coolbot.
Not sure yet what he has for AC unit

Put in 4" of foam below the concrete pad. The pad will conduct a lot of cold into the base fill.

Assuming this is for personal use I would recommend https://www.homedepot.com/p/Glaslin...-Paneling-1-Pack-MFTF12IXA480009600/100389836
for the walls possibly the ceiling. Don’t forget the floor drain
Get the smooth FRP for the interior. Easier to wipe down.
Floor drain is a must with a plug to keep the cold air from escaping.

Most window A/C units don't have a defrost cycle. Only way I know to prevent freeze up is to limit the amount of wet items in the chiller or add a dehumidifier
