Venison sticks

My venison snack sticks turn out pretty good except I get a greasy film after taste after eating one! Kinda like in roof of mouth wax feeling. What can I change to avoid that?
For every #1 of venison I use #1/4 of ground pork butt. I use commercial seasoning like hi mountain or PS and about 1/4cup water,
The firmness of sticks is good, there’s no fat drippings during smoking and sticks don’t look or even taste fatty, so the 25% pork butt ratio seem good ( I’ve even done 20% w/same results)
Is it the pork butt? Casings are from ps seasonings company.
Anyone else experience that?

GG, I have only got that waxy taste from actual venison fat never from pork butt /pork butt back fat. Is your venison trimmed of all fat ? I do a 20-25% pork butt to venny ratio like yours with no funky fat flavor?

A processor did my deer so not sure what they used for the burger, but I plan to harvest a couple more deer in 2 weeks and will take some lean cuts and grind myself and see the difference. You
May be correct and the V-burger may of had fat and that is causing that.
