venison snack stick

Shot 2 deer this season so have plenty of venison.

Found Len Poli's Snack Stick(Slim Jim) recipe and thought I would give it a try.

Anyone use his recipe?

I will substitute venison for the beef, and will omit the "Phosphates" and "Sodium Erythorbate", since I don't have them or know how to get them.

Any tips for a first time snack stick maker?

BA, there are plenty of snack stick posts if you use the search bar. An 80/20 or 70/30 venison to pork trim will do you. Good luck and have fun !
