Vacuum Sealing Jars

Hello

I have a Foodsaver vacuum sealer, with the mason jar attachment. I have used this once for making pickles (using Al and Steve’s recipes).

However - what other food/produce/etc can you use the vacuum seal on for jars?

In the current environment, I’m curious how the vacuum sealing is or is not like true canning/preserving.
 
I’ve actually been thinking about this myself. I have a canister for my Foodsaver laying around somewhere.

I like to buy whole bean coffee and grind it myself. So I’m gonna try storing it that way. This will allow me to buy a bigger bag and save a trip to the grocery store.
 
Works great for a lot of things , but is NOT a replacement for traditional canning , and does NOT make things shelf stable . Be good for coffee .

I do it to help with freshness of sauces and things , but keep them in the fridge until used . I don't do it for long term storage .

Yep this exactly.

Good for pickling whatever. Make sauerkraut. Store dry goods.

Yo need to be aware......
Vacuum sealing removes air from the container.... which is oxygen.....
Botulism spore thrive in an oxygen free environment and will multiply....
ANYTHING you vacuum seal should be long term stored in your freezer...
maybe for a week or so in your refrigerator....
I use the bags for storing garlic in my freezer... If the freezer ever quits, I will discard the garlic... root crops are VERY susceptible to botulism as the bacteria lives in soil...
 
What I've done a few times is use them to quick marinade meat. Put marinade in 2 separate qt. jars then put deer loin steak in. Can't be packed in. Then vacuum seal. Need to roll or shake jar a few times. Ready to go in a hour instead of 4-6 hours. Not much good for anything of size though.
