Just stuck my head into the fridge and take a look. This thing is coming along beautifully!! It's gonna be another 3 weeks before it's ready and I cannot wait!! I'm planning to pull out all the stops for this one....but still have not gotten the entire menu dialed in yet.

Still in the packaging when bought

Out of the package, rinsed, and let dry off a bit

Here we are 45 days into the aging process. Taken just a little while ago

This could well be the absolute best meal I've done. It's gonna be tough to top the Piedmontese Rib Eye Cap steaks but hopefully this will do it.

I can only hope. After spending over 2 months baby-sitting a piece of meat, i'd hate to think it's going to be a disaster.

Maybe so but it's a cool, yucky, rainy day so not much to do outside unfortunately. It's been an opportunity to continue our good natured "food war games". I cannot begin to tell you how much I've enjoyed this. It's been a blast and something to do on an otherwise wasted day. Seriously John, the enthusiasm and encouragement you show people in this forum is very inspiring, plus you have a way of making it humorous and fun. The banter we have shared and the rapport that we have developed are certainly some of my SMF highlights.

Happy to be here,
Robert
