Afternoon!

Figured I would do a quick post of some sausages I made over the Labor Day weekend for my next upcoming tailgate!  My wife, friends, and I are going to see Jason Aldean this Friday and thought why not...

So I made about 4 pounds of fresh Medium Italian and 4 pounds of fresh Sun Dried Tomato and Parsley.  

I did my best to clean the pork butt of the bone, membranes, and such and hope I didn't miss any!  The last thing I want is for some of my friends to take a bite into some nastiness or something chewy! But sometimes it just so damn hard to cut it all out without losing half the weight of the butt...am I right?

Don't worry............. I never trim. I grind it all. I've made a lot of sausage and never had an incident. I think its a matter of preference.............
