Up Now/12 Pounds Of Summer Sausage

Gotta get things done before we head south next week.

Mixing 12 pounds of SS. Didnt think I would like the mixer after I had bad ones years ago, But so far its good.

Had to get big daddy out.

Clear collagen and using up some extra mahogany.

Hung for 2 hours.

Snoopy at a PID of 130 for 2 hours then up 10* every 2.5 hours.

The fan install works great. Going with apple smoke into the night.

In for the ride. I have goose in the freezer I will be going through over the next 2 weeks or so....snack sticks on deck for me..

Cut and taste and now vac seal.

Few for some friends and rest to GA.
