UDS Sirloin Tip Roast, Corn, and Egg Plant with Parm

Ran the UDS at 270F +/-

Pulled at 128F
Rest in cooler for half hour
Kept the juices for dipping

Gave my wife the webber to cook the egg plant and she pulled it off ... NICE!

Moist tender meat!
Corn was super sweet!
Egg Plant was real good!

@zippy eggplant parmesan is different in this part of the country. Here it is breaded and either fried or baked and then tippped with sauce and mozzarella cheese.
