A uds will give you the best flavor there is especially because you're cooking directly over the fire and the drippings add a ton of flavor. Don't buy the whole uds because it isn't cost effective.

Look up this... Big Poppa Smokers on Google. You supply the drum and you buy the kit. They added an enhanced kit with an ash catcher but you're better off with the standard kit for 140 and putting something like a pizza pan in the bottom.. Or a spare lid with the rim cut off and edges bent up.

Mike, evening..... an UDS will do all the smoke you want, if you bury flavor wood chunks in the charcoal briquettes....  more chunks, more smoke...   You need to use the minion method for the charcoal.....    then you can get 12-24 hours of continuous cooking without adding charcoal.....   There are kits available for UDSmokers..  Big Poppa is one kit.....    There may even be some for sale on line....

Mike Yea they're easy to build or the BP kit is super easy and reputable/proven. There aren't any other quality kits like what I mentioned.

Absolutely.. This basket set up is unique and is worth it.
